Somewhere in the valleys of Bulgaria, where rivers have been flowing down from the Rhodope Mountains for thousands of years, there are family-run farms where sturgeon are raised with a patience that the modern world has all but forgotten.

We are Svetlana and Vihren—originally from Bulgaria, now living in Geneva. It was while rediscovering the riches of our homeland that the idea for CaviarNoir.ch born: in the valleys of Thrace, family-run farms have been raising sturgeon for over 25 years in exceptional spring waters. A rare expertise, remarkable quality, and a treasure worth sharing.

So we chose the shortest route possible: from the farm to your table, with no middlemen. We know our producers by name. We taste every batch. No fancy storefront. Just a couple who know their producers by name and taste every batch.

25 years of expertise

In the valleys of Bulgaria, in the mythical land of Orpheus and Spartacus, our partner farmers have been honing their craft for over 25 years. Their ponds are fed by crystal-clear rivers and natural spring water. Time seems to stand still there.

Sturgeon farming is an exercise in absolute patience. It takes seven years for an Osciètre to produce its first caviar. A Beluga takes twenty. Twenty years of pure water, daily care, and passing seasons. When you open a jar of Beluga, you hold two decades of patience in your hands.

It is this slow pace that makes all the difference. You don't rush a sturgeon. You go along with it.
